Recipe: Apple crumble with lavender sugar
Want to add a unique Provençal touch to a classic dessert? Here's an excellent recipe for lavender apple crumble. It's easy to prepare and takes just a few minutes.
This traditional British recipe, inspired by “Apple slump”, a 19th century dessert very similar to crumble, only became popular after the Second World War. Indeed, it was the shortage of ingredients during this period that prompted chefs to invent a dessert that was easy, delicious and practical, using whatever resources were available. The crumble was thus born of necessity, inventiveness and the desire to create convivial moments during a particularly dark period.
Lavender Crumble: A Provençal Twist
This dessert is now enjoyed in kitchens around the world, thanks to its versatility and simplicity. In France, it has even been adapted into the delicious Tarte Tatin! The main difference? The use of puff pastry instead of a crumbly topping.
At Terre Ugo, we love celebrating tradition while adding a touch of innovation. That’s why we’re bringing you the ultimate Provençal version of the classic crumble—with a little twist to make it even better! The addition of lavender-infused sugar turns this recipe into a unique taste experience. It’s fresh, healthy, and absolutely exquisite. And, of course, it’s always more delicious when shared!

Team’s Tips
The beauty of cooking lies in the ability to experiment with new ingredients, create unique recipes, and unleash your creativity. Here are some variation ideas and pairing suggestions to add diversity in flavors and textures, while adapting to seasonal and dietary preferences.
Combine crumble with different seasonal fruits for a variety of flavors. In winter, try it with pear or banana, while in summer, peach and raspberry make an excellent choice. Throughout February and all year round, prioritize fresh, locally sourced fruits. This not only guarantees better taste and quality but also supports local farmers. By choosing local produce, you contribute to environmental sustainability by favoring short supply chains and being mindful of product origins. These small actions help reduce chemical use, transportation pollution, and excessive fertilizers in agriculture.
For the freshest produce, we highly recommend visiting the fruit and vegetable markets in Aix: Place Richelme (daily), Place Verdun & Place des Prêcheurs (Tuesdays, Thursdays, and Saturdays)
For an original variation, try a savory crumble with seasonal vegetables such as spinach, broccoli, cauliflower, and onion. Add goat cheese, Parmesan, and instead of our lavender sugar, use our Camargue sea salt with Provençal herbs. As you can see, this recipe is incredibly versatile, offering endless possibilities!
For a crunchier topping, mix in chocolate chips or oats. This will give your crumble an even crispier bite, making it a treat for both kids and adults!
Pair your crumble with a refreshing and original beverage. While it is traditionally served with black tea, coffee, or even sweet wine, we recommend trying it with our lavender syrup. Its subtle yet distinctive taste captures the very essence of our lavender fields in full bloom! Made with only high-quality natural ingredients, it is a must-try.
